Finishing up an 8-month residency at Soho’s Chefs Club Counter, they’re packing it up and moving in with bowls of plant-based umami-rich signature sunflower broth and earthy slices of King Oysters. There's no place that I know that's doing a full ramen bar that's completely vegan and it's going to be super hardy and super delicious and very, very rich and bold.

My ramen was excellent. The rich broth is made from sunflower seeds, the rounds of pork are actually meaty mushrooms and that egg in the middle is made from soy milk and nutritional yeast.
